I like to make typical chili (meat, tomato, beans, chili spice) and add cocoa powder, Texas pete, cayenne pepper, and beer (usually an ale or stout).

Not a lot, like a spoonful for about 1 lb of meat. It's sort of like why you add a bit of salt to cookies, it helps a balance.

ing beer at 9:00 a.m. on gameday. i thought every red blooded ( or orange blooded if you look at it through a microscope) clemson football fan starts drinking at his tailgate spot at approximately 9 in the morning, unless, of course they are early risers, in which case they may start at around 7:00 a.m.. dang, i've been doing it wrong for around 25 years.

Hard to beat shish kabobs.

It's not the most "Southern dish," but it's easy and versatile.

1) Pre-thread skewers of pieced chicken, steak, shrimp porkloin, bell peppers, onions, squash, zucchinni.

2) Marinate in a blend of Italian dressing, sugar (for caramelization on the meat), lemon juice and bit of fresh chopped garlic.

3) Serve with brown rice, grilled asparagus and sweet potatoe casserole.

You can feed 10 people for about 60 bucks.

Baked Beans with Bacon Bread Crumbs (from Bon Appetit)

Ingredients

1 tablespoon vegetable oil
8 ounces smoked ham or tasso, diced
1 large onion, chopped
2 garlic cloves, minced
2 cups ketchup
1 cup (packed) light brown sugar
3/4 cup mild-flavored (light) molasses
1/2 cup whole grain mustard
1/4 cup Worcestershire sauce
1 tablespoon hot pepper sauce
1/2 teaspoon crushed red pepper flakes
Kosher salt, freshly ground pepper
3 15-ounce cans navy beans, drained, rinsed
4 ounces bacon (4–5 slices)
1 cup panko (Japanese breadcrumbs)

Preparation

Preheat oven to 350°. Heat oil in a large heavy wide pot over high heat; add ham, onion, and garlic. Cook, stirring often, until onion caramelizes, about 5 minutes. Reduce heat to low. Add ketchup, next 6 ingredients, and 4 cups water to pot; season to taste with salt and pepper. Let sauce simmer until slightly thickened, 10–15 minutes. Stir beans into sauce.
Cover and bake beans until juices are bubbly and thickened, about 2 hours.
Meanwhile, place bacon slices on a rimmed baking sheet. Roast in oven until crisp, 10–15 minutes. Transfer to paper towels to drain. Let bacon cool and reserve 1 Tbsp. bacon drippings separately.
Coarsely crumble bacon; place in a food processor with reserved drippings and panko; pulse until bacon is finely chopped. Season with salt and pepper.
Remove beans from oven. Preheat broiler. Sprinkle beans with bacon breadcrumbs. Broil, uncovered, until crumbs are golden brown, 8–10 minutes.

A package of Little Smokies, wrap in bacon, put them in a cookie sheet, dump a box of brown sugar on them, bake. At 350 until bacon is crisp.....eat warm or let sit and eat cold...taste like candy...yum yum yum

Buy as many whole , fresh Jalapenos as you want to do . Cut them in half and clean them out (optional if ya want more heat) . Stuff with a little smokey sausage and cream cheese . Wrap in bacon and grill em up (or bake in the oven anytime) . Best Jalapenos poppers you will ever eat and it's easy .

Mini Ham And Cheese Rolls



Ready In: 35 Minutes
Servings: 24
"These savory sandwiches--made with store-bought dinner rolls--turn rich and flavorful when drizzled with a buttery onion topping just before baking."
(I like to use the small Hawaiian rolls.)
Ingredients:
2 tablespoons dried minced onion
1 tablespoon prepared mustard
2 tablespoons poppy seeds
1/2 cup butter, melted

24 dinner rolls
1/2 pound chopped ham
1/2 pound thinly sliced Swiss cheese
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a small mixing bowl, combine onion flakes, mustard, poppy seeds and margarine.
3. Split each dinner roll. Make a sandwich of the ham and cheese and the dinner rolls. Arrange the sandwiches on a baking sheet. Drizzle the poppy seed mixture over the sandwiches.
4. Bake for 20 minutes, or until cheese has melted.
Wrap in foil to keep warm until ready to eat.
