I have used grits where I had to separate the grits from the chaff. They came directly from a grist mill in Pickens County.

If you don't stir grits while slowly pouring them in boiling water for the first few minutes, they will surely get clumps in them, and you may as well throw them out and start over. Continuous stirring when first put in a pot of boiling water is a must bc once they clump up, it's almost impossible to get the clumps out, so just pour them out, and start over!!!

No less than an hour to take the gritty feeling out. Cook on low heat with 1 half stick of butter or margarine, prefer butter myself. Keep covered and stir about every 5 minutes, if grits start to get too thick, sprinkle in a little water and stir to thin them, but cook no less than an hour!!!

Of course it’s ok. 60 some odd years ago that’s how I was introduced to “Georgia ice cream”. As I matured I came to understand that to fully enjoy the experience grits and fried “cackleberries” they had to be cooked for at least 30 minutes with butter, salt and pepper. Got a pot on the stove right now. If you want to get adventurous add some garlic,red chillies and cheese!
Lake Side yellow grits are my favorite.

Salt, pepper, cheese (especially cheese), bacon/bacon grease, milk, cayenne pepper, even some garlic powder (mostly for fried grit cakes)....all acceptable. No sugar.

In the days after my rotator cuff surgery I was thankful to have had the foresight to buy some instant grits. I had previously, of course, always turned my nose down at the thought of instant. Turned out that instant grits aren't all that bad. The instant oatmeal I bought was awful!
BTW my ancestors are from the Old Pendleton District.

If you are southerner, butter only. If you are a yankee, sugar and any other thing you can put on it to screw up good grits!!!!
Also, Grits should be cooked no less than an hour on low heat with a half stick of butter, add just a sprinkle of water if it starts to get too thick!!!!

I agree with the cook time part, but if you haven’t tried them with cheese (extra sharp) I think you are missing out.

My wife is from Texas, 50 years ago when she moved to S.C. she ordered grits for breakfast at a Waffle House. She had never had them and her dad made her eat them. Her only choice was to add sugar to them . She did eventually moved to Sweet and Low . So when we eat at Waffle House now and she ask for sweet and low , I just say she’s not from the South and eat my grits the right way with salt , peeper and butter.

Butter, yes. Sugar, no. The secret to great grits is....chicken broth. Substitute chicken broth for water, or half chicken broth, half water. Whatever your taste preference. Takes it to a different level.
