One last butt question…………

Oct 14, 2022, 8:18 AM

When I place the Boston butt on my smoker grate, should I place the fat side up or down?

TIA

Really depends on the temp you are cooking at. I always put fat side down to help protect the meat from drying out. Hope it turns out well and Go Tigers!!!

I'm a fat side up guy. Make sure you score it pretty deep, then add the dry rub liberally into the fat.

Yep, all the BBQ restaurants here where I live say fat side up. The fat renders down over the meat and keeps it moist.

I assume you're smoking the butt? If so I highly recommend placing it on a cake cooling rack in a pan to catch the grease. Really helps clean up.

Fat side up.

Score the fat before you put the rub on so the rub can get down to the meat. The fat will fall off when you start to shred the meat.
