So what do you call "modern football?"......

I would say 1980 is modern football. IMO, it started in 1970.
But I'm 63 so I have a different perspective than you do (am guessing you're a lot younger).

Somewhere along the way the dawgs took a cue from bama and started claiming some bogus title from some season in the '40s or something like that.

My bumper sticker reads "Honk if you were alive when UGA won a National Championship". I have very quiet rides every day.

I think to be a blue blood you have to be arrogant and entitled, regardless of your achievements so no, Clemson is not considered a blue blood of college football. ??

It really depends on where you draw the line for "blue blood". But if you ask football fans of other schools, very few would put us in that category, so no, we're not. Compete for another decade like the last and we will start to be seen that way by many.
My blue blood list-
Alabama Ohio State Notre Dame Southern Cal Oklahoma Michigan Nebraska Texas
Not quite there- Florida State Penn State U of Miami Florida LSU Clemson TAMU Auburn

You are welcome to make your own list, this is mine. I will assume you have issues with Michigan, Texas and Nebraska on this list, not sure how anyone could argue about the others. If you care to research the history of these three, you will see why they are included.

Would be in the Blue Blood catorgory
Based on the Poll era beginning in 1936
AL 12 ND 8 OK & USC 7 Ohio St 6 Miami & Nebraska 5 Minn & Texas 4
These are the Blue Bloods
Clemson FSU FL & LSU 3 are close
Auburn has 2 A&M only 1 so they are not close

Penn State and Tennessee would be “Blue Bloods” as well. Penn State had two National Titles in the 1980s, and they are Top 10 in all time wins. I am fairly certain Tennessee is Top 10 in all time wins as well.
