So the guys I hired to do the sheet rock were ####### awful. Almost every cut out for the outlets are too big and there are gaps between the sheetrock and the cover plate. I have looked and looked for larger outlet covers but can't find any.
What are some other ideas for covering these gaps?

just stuff in a lot of tinfoil, spare wire, or any other metal conducting medium.
In all seriousness, that is frustrating, we have a few in our house, luckily not in high view areas but haven't come up with a solution

I would think you could barely see it with the cover on. Just mud it a little... it didn't even have to be all that pretty, you are just putting filler in to close off a very small gap.

dixie paper plates. Trim to fit using scissors. Use duct tape to secure them to the sheetrock, install oulet covers, then use white out to paint over the paper and tape that shows.
Easy DIY, probably under $10 assuming 1 bottle of white out is enough.

And touch up paint. Do 2 to 3 coats and build out if necessary. 5 min a day for about a week and you are done.

I once did a remodel job of an older house on a nice pond that was built by a "builder." Dude used scrap wood to do all the sub-floor. It looked just like that but a bunch of little pieces of scrap plywood. Electrical was pieced together like a plate of spaghetti, a bunch of pigtails running in the walls and not even tied up in junction boxes. Surprise the place didn't burn down and kill him.

cookie cutter "Homes starting from the mid 300's!" developments. Builder did not nail any of the subfloor down and the roof also had a pretty big leak. They're having to take them to court to have the damages fixed so they can sell the POS.
That's why I bet a lot of these subdivisions popping up are going to be section 8 housing within a decade.
