I don't know if you ever heard of a guy named Jim Roller and his website https://destination-bbq.com/.
He's been writing a blog since 2012 about BBQ in SC. His website has an interactive map of every BBQ joint in SC, and a number of interesting articles. He's traveled the state and interviewed pitmasters like Rodney Scott. His website offers a few recipes from BBQ joints around the state.
Well, now Jim has published a book of recipes from pitmasters like Rodney Scott, the Bessinger brothers, the Dukes, Harry Hite, and many others. It also includes a history of BBQ in SC. I received my copy yesterday and am so excited about it that I want to share it with my Tnet buds. I received nothing for this shameless promotion. Want to cook pitmaster X's BBQ/hash/sauce/rub? It's all in there.
He has a few hard copies left on Etsy, a digital version on Etsy, and a more expensive hard copy on Amazon. Just search on DestinationBBQ.
I'm a mustard-based sauce guy myself, being raised in that part of the state. Check out the map of different sauces in SC on the website.

If Jim Roller doesn't have Carolina BBQ in New Ellenton, SC in his book, throw the book in the trash!!
Just kidding, lol I'm a BBQ fiend so I'll have to check it out!

That's the first place he visited in 2012 when he started his blog. I got Rodney Scott's book for Christmas, and Roller has a number of recipes from Scott's and Rodney in his book.

Bought four myself, one for me and 3 more for gifts.
I would like to add one thing about BBQ. A BBQ joint ain't a real BBQ joint unless they serve hash and rice with their BBQ. Nuff said.

Maybe you've encountered some hash containing pork liver. Some of the recipes have it in them.
