I salt everything before, butts and briskets overnight, this usually draws out enough moisture that you don't have to use a binder, like mustard. If I do use a binder its usually olive oil or vegetable oil. If you salt before look to see if a premixed rub has salt in it.

Don't know, I just started smoking about 6 months ago on the advice of my doctor. FWIW, I currently smoke about a pack a day. For optimum health, my physician wants me up to at least 2 packs a day by Christmas

If you want it to look like the pro’s when it is done, pack the rub on there at least 24 hrs before you smoke it. On a Boston butt, try to maintain 250° in the smoker until your internal temp is between 196° - 198°
Putting the rub on way in advance is how you get a good bark. Without doing that, most of the rub will roll off with the grease.
Move the butt into a tray (like a Turkey tray) for the last 3-4 hours it is on so that when you pull it apart you can mix some of the juice back into it and you won’t have any dry pieces. You don’t want to put it in the tray too early or you will have A TON of grease In it.

Lately, with the price of meat, seasoning, time and hard work we’ve been going to Smoking Butt Heads on Pelham Rd. right beside Skins Hot Dogs. It’s really,really, good. Go early because they sell out quick!

oven, it's not taking any more smoke anyway. That way it won't dry out. You must wait until the internal temperature is at least 190 and more like 195-200. That is a must to get real pulled pork. That's why I wrap the last few hours, I want to make sure I wait long enough.
What time is dinner? I don't know, but it's not coming off early! I try to give myself 12 hours but it's usually about 10.
Always let it rest a good 30 minutes too.

I love my Recteq RT590.
I use a lot of Heath Riles rubs and recipes. He does a ton of videos on smoking and grilling.
