They hand or throw him the ball on almost every single offensive play. His numbers are huge because nobody else ever gets to touch the ball.

I could argue against that in 2 ways.

1) What do you think QBs do? They literally touch the ball on every snap. Dual threat QBs, in particular, are responsible for a huge portion of their teams total yards because they either throw it or keep it a very large % of the time. This is a large part of the reason that QBs typically win the award.

2) If McCaffery was just a volume guy why did he average 6.0 ypc and 14.3 yards per catch last year? Those are great numbers. Very efficient. Not to mention what he does in the return game.
