Let me recommend this stuff I bought when we were in New Orleans....It is excellent. I will have to figure out where to order it though because I cannot remember the store...

like Don Prudhomme that just did not have ANY heat. I put it on pretty liberally on just one side of the filet. It was not cheap at 10 dollars for that little bottle, but I am going to try to find something larger...On a scale of 10, with the insane wings at Zaxby's being a 9, I would say this is about a 5.

Scroll down-- there's an easy recipe. Just add more cayenne to make it hotter.

INGREDIENTS
Nutrition
1 tablespoon sweet paprika

2 1?2 teaspoons salt

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon cayenne

3?4 teaspoon white pepper

3?4 teaspoon black pepper

1?2 teaspoon dried thyme leaves

1?2 teaspoon dried oregano leaves

Blackened red snapper is so good it should be illegal. Same for blackened oysters. One time I had blackened swordfish in a restaurant in Kemah TX, it upset me when I got full and couldn't eat any more.

Here in Texas, just about everything can be blackened. Is this a common thing in South Carolina?
