Not sure if all this makes enough difference to go to the time and trouble but I might go looking for a nice ribeye for tomorrow and try it out.

Yes! I usually don't put the steaks back in the fridge

though after the salt portion anymore, I just let them sit out on the countertop for the duration from there. Hard to go wrong either way, though. Dry brining also works great with pork, especially thick cut chops. Those I do keep in the fridge for the duration.

sugar per pound for an hour in the fridge before I cook. Again do not wash off, but add whatever rub/spices you want.

I've done it many ways, but dry brining brings out a lot of flavor. I ahve not started aging steaks, that will be my next adventure

Yes for sure, just be careful not to over salt if the steaks are not too thick
