Cast Iron Steaks...recipe please...

Daughter had surgery a few days ago and she wants a steak tonight as her first real meal since....

I recall someone on here swearing by a pan seared steak. If you recall please post the recipe as I do not want to fire up the charcoal and all of that tonight.......thanks

Get the pan as hot as possible, sear one side, flip

I have moved to the reverse sear method. Roast in a baking dish in the oven (I use 225) until internal temp reaches your desired doneness:

Temperature and Timing for Reverse-Seared Steak

For 1 1/2–Inch Steaks in a 250°F (120°C) Oven
Doneness Target Temperature in the Oven Final Target Temperature Approx Time in Oven
Rare 105°F (40°C) 120°F (49°C) 20 to 25 minutes
Medium-Rare 115°F (46°C) 130°F (54°C) 25 to 30 minutes
Medium 125°F (52°C) 140°F (60°C) 30 to 35 minutes
Medium-Well 135°F (57°C) 150°F (66°C) 35 to 40 minutes

ProTip: Don't go buying some crappy piece of meat. Go ahead and spend the money and get something good.

Preheat pan in 500 degree oven.

Throw buttah in there. Sear on stovetop 2 minutes each side. Back in oven for 2 minutes. Then rest for 2.

Medium rare steak is ready.

Anova & Joule really have the best sous vide cookers on the market. I have a Joule I bought a few years back, and I'm wishing I had bought 2, since I know the current one won't last forever with the amount of use I'm putting it through.
