Gotta brag. I hot smoked a pork tenderloin to 130 on apple wood then chilled and cut into medallions. Finished by browning in thyme butter finished with white wine and shallot reduction. Turned out perfect. Served with fresh picked sliced tomatoes and stovetop mac & cheese
Washed down with Hop’Lin IPA

Sous Vide filets to 120, then gave them 2 minutes per side

in a skillet (buttered them after the 2nd flip, some zucchini with some grilled veggies I found at Costco put in my oven to roast. Had 2 ears of corn left over and it was so sweet we called it dessert.

Sautéed sweet red peppers, caramelized onions with a little Worcestershire sauce and butter, seared flank steak with salt, pepper, and garlic, and toasted the rolls under the broiler. Built sandwiches, topped 'em with shredded mozzarella cheese, and put 'em back under direct heat for 90 seconds. Perfection.
