You’ll see that note buried in the ESPN page. If they aren’t projections then I assume they are based on action so far.

LSU and Alabama will not both end up undefeated. When one of those teams loses, an undefeated Clemson moves ahead of the losing team.

You are correct, which (to me) makes that ESPN

poll irrelevant and ridiculous.

That a number of the panelists exclude a (potentially undefeated) Clemson, while including two SEC teams makes the poll an exercise in futility.
