So I hear the guvnuh is having a presser at 4:30

Jul 1, 2020, 3:42 PM

Wonder what that will be about?

Hopefully he finally puts to rest all of the controversy

Jul 1, 2020, 3:44 PM

2024 white level memberbadge-donor-05yr.jpg flag link military_tech thumb_downthumb_up

I like your funny words magic man

it's chicken bog.

Jul 1, 2020, 3:49 PM

Its only perlow, or perloo, perlo, or perlough, if it has (yuck) tomatoes in it.

badge-donor-05yr.jpg flag link military_tech thumb_downthumb_up

Who puts tomatoes in perlow?

Jul 1, 2020, 3:51 PM

those guys are communists

people who call it perlow

Jul 1, 2020, 3:52 PM

'cause it's chicken bog if it doesn't have tomatoes.

UDPs. It's chicken and rice.

flag link military_tech thumb_downthumb_up

Imagine cooking whole chicken breasts in boiling water

Jul 1, 2020, 3:55 PM

with the cheapest rice you can find, dumping in a few links of sausage and then serving it to people like you're proud of it.

I can't do it.

flag link military_tech thumb_downthumb_up

It's obvious you've never had legit Pee Dee style perlow

Jul 1, 2020, 4:00 PM

right MauldinT®

Boil chicken. Set aside to cool. Keep broth

Cook bacon in cast iron pot
Caramelize onions with the bacon grease in cast iron pot.

Cook sausage in other pan with garlic and onion powder. Wrap in paper towels to drain grease.

Debone chicken, season.

throw it all in the pot with broth and Uncle Ben's Long Grain Rice.

Salt and pepper heavy. Add in Kitchen Bouquet

Boil until rice is ready

This sounds better than the single-pot crap I've seen

Jul 1, 2020, 4:05 PM

made and been a part of.

Never heard of bacon and onions in it. If I'm cooking with cast iron and am draining #### and cooking things in different increments and in different portions, I generally will spring for crab legs, steak, lobster, shrimp, scallops.

Seems like a lot of work for a chicken and rice dish. I would be willing to try it in the way that you described --- sounds good.

The most overrated southern cookout dish

Jul 1, 2020, 3:53 PM [ in reply to Hopefully he finally puts to rest all of the controversy ]

We serve that crap at every community even for the FD. And the guy who is supposedly a chicken bog wizard barely seasons the chicken or the water before dropping the ingredients in the boil, which makes it worse.

Boiled chicken is ####### gross. Louisiana hot sauce and the sausage is the only way I can choke that #### down.

It shouldn't even be in the same conversation as Frogmore Stew/Lowcountry boil

flag link military_tech thumb_downthumb_up

Is it in the same conversation?

Jul 1, 2020, 3:54 PM

'Cause those are completely different

badge-donor-05yr.jpg flag link military_tech thumb_downthumb_up

Both are cooked in a large stockpot over a propane

Jul 1, 2020, 3:57 PM

burner and designed to serve a lot of people using readily available ingredients.

I mean, they're pretty similar to me from a preparation standpoint. One is actually good and the other is just weird.

flag link military_tech thumb_downthumb_up

Chicken bog = 10X more of a pita to make than

Jul 1, 2020, 4:01 PM

FROGMORE STEW. It's not lowcountry boil (that's a Yankee title). It's not Beaufort Stew, that's those yankee-ish folks from "up nawth" in Chawstun. NOPE. It's FROGMORE STEW, invented in the town of Frogmore, SC in Beaufort County.

2024 orange level memberbadge-donor-15yr.jpgringofhonor-tiggity-110.jpg flag link military_tech thumb_downthumb_up

How is it more of a PITA to make?

Jul 1, 2020, 4:03 PM

Educate me. It's been a while since I've made it and I can't quite remember the details, but recall it taking about an hour and a half start to finish with the right sized pot.

flag link military_tech thumb_downthumb_up

You have to boil the chicken forever

Jul 1, 2020, 4:05 PM

Then take it out, let it cool enough to pluck off all the meat. Then you have to cook rice, add the meat back in. Just a PITA.

Frogmore stew you boil some water, add old bay, toss in corn, then sausage, finally come frimps for maybe 2 mins. AND DONE. Taters take longer, and tend to get mushy....I leave them off because I'm lazy as ####.

this dish, then. I just remember the dozens of times I've had it being incredibly bland. Must be doing it wrong!

flag link military_tech thumb_downthumb_up

Boiled chicken? WUT?

Jul 1, 2020, 4:13 PM [ in reply to You have to boil the chicken forever ]

I've only ever had it with pulled grilled or baked chicken.

badge-donor-05yr.jpg flag link military_tech thumb_downthumb_up

Same.

Jul 1, 2020, 4:16 PM

I've seen them throw a whole half or whole chicken in boiling, underseasoned water (let's face it, you can't properly season 3-5 gallons of water without ruining the rice.

flag link military_tech thumb_downthumb_up

Thats why you use chicken broth.

Jul 1, 2020, 4:17 PM

low sodium, else it gets salty AF when you put the sausage in it.

badge-donor-05yr.jpg flag link military_tech thumb_downthumb_up

Boil it. Save the broth for the rice.

I’ve always believed the difference between an old fashioned frogmore stew and a Beaufort stew is the addition of potatoes

Old Bay or Zatarains Creole blend?

Jul 1, 2020, 4:12 PM

I tried to give old bay a chance since it's like the Xerox of that type of blend, but to me Zatarains has much more UMAMI flavor than Old Bay.

Re: Old Bay or Zatarains Creole blend?

Always old bay. The cajuns can keep the zatarans for their mudbugs

I've always called it that myself. Whatever you call it I'll eat it. Pretty damm good!
