Boil chicken. Set aside to cool. Keep broth
Cook bacon in cast iron pot Caramelize onions with the bacon grease in cast iron pot.
Cook sausage in other pan with garlic and onion powder. Wrap in paper towels to drain grease.
Debone chicken, season.
throw it all in the pot with broth and Uncle Ben's Long Grain Rice.
Salt and pepper heavy. Add in Kitchen Bouquet
Boil until rice is ready

Never heard of bacon and onions in it. If I'm cooking with cast iron and am draining #### and cooking things in different increments and in different portions, I generally will spring for crab legs, steak, lobster, shrimp, scallops.
Seems like a lot of work for a chicken and rice dish. I would be willing to try it in the way that you described --- sounds good.

We serve that crap at every community even for the FD. And the guy who is supposedly a chicken bog wizard barely seasons the chicken or the water before dropping the ingredients in the boil, which makes it worse.
Boiled chicken is ####### gross. Louisiana hot sauce and the sausage is the only way I can choke that #### down.
It shouldn't even be in the same conversation as Frogmore Stew/Lowcountry boil

FROGMORE STEW. It's not lowcountry boil (that's a Yankee title). It's not Beaufort Stew, that's those yankee-ish folks from "up nawth" in Chawstun. NOPE. It's FROGMORE STEW, invented in the town of Frogmore, SC in Beaufort County.

Educate me. It's been a while since I've made it and I can't quite remember the details, but recall it taking about an hour and a half start to finish with the right sized pot.

Then take it out, let it cool enough to pluck off all the meat. Then you have to cook rice, add the meat back in. Just a PITA.
Frogmore stew you boil some water, add old bay, toss in corn, then sausage, finally come frimps for maybe 2 mins. AND DONE. Taters take longer, and tend to get mushy....I leave them off because I'm lazy as ####.

I've seen them throw a whole half or whole chicken in boiling, underseasoned water (let's face it, you can't properly season 3-5 gallons of water without ruining the rice.

I tried to give old bay a chance since it's like the Xerox of that type of blend, but to me Zatarains has much more UMAMI flavor than Old Bay.
