srs ? about lobster cooking.

Jun 21, 2013, 9:55 AM

You guys got any tips about cooking live lobsters? Is it just boil the water, throw 'em in? Can you toss two in the same pot at the same time? What's the best way to murder these sea crickets? Ain't never cooked them before, but think I might tomorrow.

Don't boil them - you want to steam them.

When I cooked lobsters the first time:

Used a big pot outside
Sauteed onions in butter and white wine
Added some water
Added peppercorns
Pumped up the heat so what little liquid is boiling
Tossed in lobsters
(spoke gently to them before I murdered them)
Closed lid
Waited about 5-8 minutes
Took em out
Eat

Don't boil or steam. Grill.

Jun 21, 2013, 10:09 AM

Lobsters are best grilled. Put them in your freezer for 20 minutes, put them on their back and put a knife through their head. Place on grill.

Start Big Green Egg, get it good and hot.

Take lobster out of YETI cooler, they should still be good and chilly because they YETI never fvcks up.

Remove monster cables from around Lobster's claws so they can stretch.

Pour three bottles of Westy 12 in a large le Creuset ceramic pot. Let lobsters soak in Westy for 3-4 minutes or until Real Housewives of Orange County goes off.

Place live lobster in BGE and let those mothereffers suffocate and cook.

Throw away YETI, monster cables, and le Creuset pot as the lobster smell is hard to remove. Dump Westy 12 in the storm drainage out front (PRO TIP: Don't let the HOA see you do this). Eat Lobster?

*I have never cooked lobster

Unless serving them in whole halves I recommend twisting tails n' arms off prior to boiling.

I also recommend simple clarified butter dipping or making a citrussy mayo based dressing to include with lobster meat in a hot dog bun. Lots o' lobster roll recipes out there.

Never boil if you can steam.

Jun 21, 2013, 10:31 AM

And, as pointed out by other posters, grilling or broiling is pretty effin' good too. Single stab of a sharp knife to the head, lengthwise to the body/tail, will end it's miserable life. Keep live on top of wet newspaper in a bowl in the bottom of your fridge until you're ready to murder them.

Two inches of water in the biggest kettle you have. Cover. Boil. Remove rubber bands from claws and drop lobsters in live. Cover. Cook 8-10 minutes for (2ea) 1-1.5lb lobsters. Cook 12-15 minutes for (2ea) 2-2.5lb lobsters. Let the steam cook them, never submerge lobsters when boiling them.
