blue cheese dressing smwich. I might take the challenge today. If there's three things that go with anything it's bologna, peanut butter and my home made blue cheese dressing.

Sour cream, salt, pepper, high quality blue cheese crumbles and thin it to use with whole culture buttermilk. I've tried dabbling with other add ins but lemon and such distract from the truth about blue cheese.

It's comparable to Shoneys BC dressing from a few decades ago. They use much finer crumbs and add sugar which I've tried and it's not bad but it's not better either. This last batch has 1/2" crumbs which are a bit large but would serve as a sandwich spread very well.

3/4th cup JFG
1 cup sour cream
ton of salt
much pepper
1 cup of BC crumbs then more according to how rich you can handle it.

For max flavor store in a lock-tight lid plastic container for no less than three days, a week is better. I've had it in a cold fridge for two weeks and never had it go bad. Of course it's full of mold when you start so who knows.

If I could afford Roquefort I wouldn't slump around with blue cheese. All I need is a goat and a limestone cave.
