Manually configure accounts in cPanel and have the employees login using SquirrelMail or Horde for web access.

Make sure to disable autodiscover if it's an option. For local access, just send the employees their IMAP credentials in a Word doc and have them set up their own Outlook or Apple Mail. They'll be able to set it up themselves without any issues whatsoever.

Trust me on this.
