I live out here now, here are some things to do and places to eat/drink

BBQ
Pecan Lodge
Hard 8
Lockhart

Tex-Mex
Hacienda Ranch
Uncle Julio’s.
Joe T Garcia -Ft Worth stockyards

Sports Bars
Texas Live, next to Stadium. Awesome
Humperdinck’s-sports bar near stadium
The Rustic-Downtown Dallas. Live music, good beer and food
Deep Ellum Brewery-downtown Dallas
Flying Saucer-tons of beer selections

Other stuff
Ft Worth Stockyards- cattle drive of huge Longhorns daily, 11:00 and 4:00
Ft Worth zoo is a good one
Perot museum downtown Dallas
George Bush museum near Dallas at SMU
Grassy Noll area is cool, but wouldn’t do the museum there, you can park and walk all around that area.
South fork from TV show Dallas is not worth the drive
Tour Cowboys stadium, only cost $20. You get to go in suite, locker rooms and field
Legacy area near Plano, lots of cool upscale stores and restaurants.
Don’t let the wife talk you into driving to Waco to see Chip and Joanna’s tourist trap.

Golf
Cowboys Club in Grapevine is pricey but a great place

Get back to me after you try the brisket. I grew up on Pork, but the brisket is a must try. I like the burnt ends style, Pecan Lodge or Lockhart is your best place to try it.

i grew up in SC but was quickly converted to TX

BBQ after living 2 years in San Antonio. I can't really enjoy SC BBQ the same way now. It's just not as good

I wouldn’t waste my time with pork in Tx. The brisket is what they’re good at. Lots of places will ask you if you want it “wet” or “dry”, get the wet.

I agree with all of your food recommendations.
Hard 8 for BBQ. I would add BABES for fried chicken. There’s one in Arlington, I prefer the one in Roanoke.

Also there’s the Texas Motor Speedway, tour that, then go eat at either Hard 8 (BBQ) or Babes (fried chicken) in Roanoke.

Making a chain tex-mex joint a stop on your tour in Texas of all places is a waste of time.

Go north of Arlington to Baja in Grapevine. Food is great and the Perfect Margarita will leave you calling Uber.

Mariano's is a Texas original with two locations; one in Arlington about a five minute drive from the stadium. The original is in Dallas and supposedly where the first frozen margarita was created. The Dallas one is a little better than the Arlington site. Brisket quesadillas are awesome!
