Travis makes a good point. If a guy proves to be functionally illterate on the Wonderlic, there is no way that player could have gotten a qualifying score on the SAT or ACT.
The SEC has always provided more than its fair share of illiterates to the NFL. In 2011 Chris Culliver scored a 9 on the Wonderlic, but that makes him a genius compared to LSU's Morris Clairborne who scored a 4 last year.

Wonderlic when they take it. Unless you're a QB does it really matter? Teams don't seem to put that much stock into it, so why should the players?

I don't think there is much correlation between literacy and the wonderlic. Have you done a sample one? 50 questions in 12 minutes is a very brisk pace (less than 15 seconds per question) and not similar to an SAT at all. It is easy to imagine someone not particularly versed in test taking getting hung up on a math question and effectively bombing the entire test if they don't realize the need to skip questions if they don't immediately know the answer. It is a simple 1 point per question system. A 4 could as easily indicate getting hung up on the 5th question as really only knowing the answer to 4 questions.
There was a thread on FGF not too long ago about the Wonderlic where everyone pretended to get perfect or near perfect scores on the first try.
