Clemson sends apology about insensitive Mexican Food

Dear Clemson Family,
Yesterday afternoon, University Housing & Dining intended to celebrate Mexican cuisine with a themed dining event at our Harcombe and Schilletter locations. Unfortunately, the event displayed a flattened cultural view of Mexican culture.
In the future, University Housing & Dining welcomes the opportunity to work with Hispanic and Latino campus groups as well as community members, staff and faculty to better celebrate the food and culture of this region and better educate the Clemson community. If you would like to engage in conversation about a future event, please contact University Housing & Dining at clemsonhome@clemson.edu.
It is the mission of University Housing & Dining to create supportive and challenging environments that enrich and nourish lives. We failed to live out our mission yesterday, and we sincerely apologize. We will continue to work closely with our food service provider to create dining programs that align with Clemson University’s core values.

What has always interested me is that the ones who complain about political correctness the most can generally be found ranting or preaching doom and gloom about "where things are headed" and such vaguely Biblical anecdotal warnings about the status quo.
It's two sides of the same negative-nancy coin.
That's said, Mexicans are pretty gross in general and I only tolerate them because white people in blue collar professions generally would rather snort pills than work. Although pretty pungent in terms of smell, Mexicans get more done for the dollar.

As an American student, I was offended by the inaccurate and offensive interpretation of American food and culture presented by Clemson dining halls every day, including (but not limited to) rubber prefabricated burgers, fried chicken gristle patties, and chemically enhanced French fries. I demand that American food be better represented by free-range venison and bison steaks cooked to order, native fruits and vegetables, smoked wild turkey at all times, and freshly caught brook trout native to the rivers of the Upstate.

This is the kind of thing that disturbs me about the current Clemson administration. Clemson use to be this sorta preppy, smart version of the Dukes of Hazzard, which was cool. Now there's this PC sensitivity element that I find disturbing. Pretty soon they'll be protesting the Ag department because they kill plants.
