2018 champs is correct, unless speaking about the CFP specifically which is 2019.

The difference is whether or not you are referring to champions of the complete season (2018) or just the playoff (2019).

Clemson is 2019 CFP Champion!
We can also claim 2018 National Champions per AP and others.

LSU may also claim the 2018 National Championship because they beat the undefeated reigning 2017 National Champions-UCF and had a good loss to #1, at the time Alabama, since SEC means more!

2018 is the correct answer. Saying “2019 CFP champs” is pedantic and not something anyone who follows college football should say. Does anyone say we are the 1982 Orange Bowl National Champions. If not, please knock it off for the CFP.
