Anyone ever cooked a brisket in oven at low temp, say 250?

If yes, what were your steps? How did it turn out?
I’m thinking: 1) heavy salt pepper rub and fridge overnite 2) bring near room temp, chat each side on grill 3 double wrap tin foil, oven cook at 250 till internal temp around 180 4) unwrap, place in pan with some dilute liquid smoke, continue in oven till temp reaches 200.
Thoughts?

Lived in Texas and errbody was all "brisket this and brisket that" and an amigo told ne how to do it in the oven low & slow. It turned out fine. Never made it since.
Texans and the New York Metro Area Jewish community are the two hotbeds of brisket making in the US.

Put a foil pouch of chips on your grill and

leave the brisket in there for an hour or until the pouch stops smoking then wrap and put in the oven.
If you want a sear throw it on the grill hot - turn it down to low and then add the chip packet and close the lid.
Cook until internal temp is 205. If you pull it at 180 you'll have some grade A tire rubber.
PS liquid smoke is an abomination and the cause of all that is wrong with America.
