American white cheese slices is the key to pulling it off. Go figure.

Milk, butter, spices, little can of those green chilis (plenty of supply of these about), low and slow. Boom.

Thanks for this. I usually just end up stopping by a Mexican restaurant & picking up some queso to go. But I’m gonna five this a try now.
