Last time I made one I started at 5 am. I got absolutely hammered. I made it through until it was done. I set it on a table too low to the ground when it was done. It was wrapped in foil sitting on the table. I passed out on the couch. I woke up and the pork butt was about half ate. My dog got to it. He also puked all over the house having ate too much. Pork butt destroyed. I would drink in control and drink harder when done.

use a glass bong and change the water out after every half pound you smoke. Also, lay off the Newport Menthol 100s for the weekend, or your lungs just won't be able to make it through the whole 8 pounds.

You're using charcoal, right?

Honestly, as long as the temperature is between 200 and 300 on the smoker, and the you pull the meat somewhere betwen 190 and 205, you'll be fine. I shoot for 225-250 and pull at 200, but I've been all over that range, and its always good.


I just slather with yellow mustard, coat with salt, black pepper, some paprika, and maybe a dash of "this-and-that".... also doesn't seem to make much difference.


Be sure to get extra drunk and send lots of snap videos. Your voice is much more country, and *Dare I say* fbcoach-esque that I would have imagined. Last time you sent a video, I would have bet money that FBcoach was narrating it. I had to double-take at the screen to verify that it was you.... and yes, I realize that I sound way more "country" that both of you.

close to 275 then falls hard when is starts. I don't recall my buddy with the same cooker having these troubles.
