Looking for chicken bog recipes
Sep 16, 2019, 9:14 AM
|
|
Tag-alongs want a chicken bog for Saturday. Being from the upstate and from a family with only one cookin' grandma this has perplexed me. I know what it is, and enjoy it, but don't know the ins and outs of a good one. Anyone have a good recipe?
I'm sure this has been discussed, feel free to link the thread. One day I'll learn how to MacGyver (maneuver) this site. Thought that was a funny autocorrect, so I left it.
I'm expecting at least one true response and four Jounge replies, please don't let me down.
TLR - Chicken bog recipe or gtfo

+ Zatarains creole seasoning.
Not as much as you would use in Lowcountry boil, but enough to add some depth.
Nothing worse than a bland chicken bog.

Any experience using the crab boil sacs? Heard they were pretty good but don't think I've had one myself.

used it for a lowcountry boil on Saturday. I wouldn't use it for a chicken bog unless you are making like a 60 qt pot of chicken bog.

I'm always weary of those "teach you how articles", but that seems to be a good base.
Did not realize it originated from the Loris area, guess I should reach out to Tig Willard and see what he has to say on the subject.
Thanks for the link!

Chicken Bog?

Ain’t that the place where the Coots play?
Mangey replies ok?
For srs. Season it how you like, use good chicken (if I have time I spatchcock smoke a couple of whole fryers with a good rub on them), cook the rice first in chicken bullion with lots of butter so it isn’t gummy, don’t scrimp on the sausage (again I like to toss it in the smoker first), and I like slivered carrots onions and celery in mine but I’ve been told I’m weird.

Only weird because of the celery, what's the point? Never tasted celery with any flavor.

It smells horrible, tastes horrible, and it taints everything it comes in proximity to. There is no quicker way to totally ruin everything in your refrigerator than to place a bunch of celery inside of it. To actually willingly put it IN a recipe is completely unfathomable to me. Those that eat it are quite obviously the walking dead, because there is no way they would otherwise be able to stomach its horrendous and vile flavor or aroma.

By far the wiener so far.
That sounds scrumptious, made my mouth water and all.

Chicken bog recipe
Sep 16, 2019, 11:32 AM
|
|
Ingredients 2 tablespoons olive oil 1 cup chopped yellow onion (from 1 onion) 1 cup chopped carrots (from about 3 carrots) 2 teaspoons chopped garlic 1 1/2 cups uncooked long-grain white rice 1 teaspoon kosher salt 3/4 teaspoon black pepper 4 cups chicken stock 1 (4-inch) piece Parmesan cheese rind 4 cups shredded boneless, skinless rotisserie chicken (about 1 rotisserie chicken) 3 tablespoons chopped fresh flat-leaf parsley 1 tablespoon fresh lemon juice 1 1/2 ounces Parmesan cheese, shaved (about 1/3 cup)
How to Make It Step 1 Heat oil in a Dutch oven over medium-high. Add onion and carrots, and cook, stirring occasionally, until beginning to soften, about 4 minutes. Add garlic, rice, salt, and pepper, and cook until fragrant and rice begins to toast, about 3 minutes.
Step 2 Stir in stock, and add Parmesan rind; bring to a boil. Reduce heat to low. Cover and simmer until rice is just cooked through, about 18 minutes. Uncover and discard rind; stir in chicken. Cook until chicken is heated through, about 5 minutes.
Step 3 Stir in parsley and lemon juice just before serving, and top with shaved Parmesan.

Bone-in/skin-on chicken thighs...some ppl use white meat too, but I think it dries out too fast smoked link sausage chopped onion finely chopped celery - half qty as of onion 1 stick butter Seasoned Salt ground red pepper black pepper salt garlic powder 3 bay leaves 8 cups water 3 cups white rice - un-cooked
I go by feel on the seasoning, so don't really have measures. About twice as much black pepper to red pepper. Fair bit of salt..about 1/2 seasoned salt and 1/2 kosher salt. More garlic powder than you would think.
Combine everything but rice in large pot. Bring to a boil. Cover and cool at lower boil/simmer for about 40 minutes.
Take out chicken. (I taste the chicken and adjust seasoning at this point if needed) Add rice and bring to a boil for 10 minutes then simmer for 10 minutes.
While rice is cooking take off skin and take out bones of chicken. Pick the chicken into small pieces/strips.
Remove bay leaves. Put chicken back in and stir.

If it’s cut up and cooked right you don’t know it’s in there but it adds something that I miss when it’s not.
