Got a pound cake in the oven right now. Will be having ham, green beans cooked with red potatoes and bacon, and cast-iron baked cornbread.

Dianne's Chicken Casserole

2 Cups chicken breast - cooked and chopped up
1 Cup cooked white rice
1/4 cup chopped onions
3/4 cup chopped celery
1 can Cream of Chicken Soup (undiluted)
1/2 cup mayo
1 tablespoon lemon juice
3 hardboiled eggs chopped up
salt and pepper to taste

Mix ingredients together and put into a large casserole dish.

Crumble 1 full stack of Ritz crackers (36) and sprinkle over top. Melt 1 stick of butter and pour over the cracker crumbs.

Bake at 350 degrees 30 - 40 minutes - golden brown and bubbly.

I got a to go order of veal piccata that comes with sauteed spinach, pasta, and garlic rolls. I ate maybe a half at most. It was really good, but too much food. I will eat the rest for breakfast or lunch.
