spaghetti squash for the first time ever tonight. Brushed lightly with olive oil, seasoned with salt and pepper, and roasted in the oven. A little garlic and parmesan cheese on top after shredding it into a bowl. Wow! Delicious!

Who knew? Will cook again.

I've cut the carbs down a lot and am having cravings for pasta and bread. I saw online where the spaghetti squash was a good substitute for the pasta.

Also, we roast cauliflower a lot, a long with broccoli, various squashes, green beans, and more.

My tip for roasting cauliflower is use some turmeric along with other seasoning. It adds great color, along with flavor.

addictive. VERY hard to do while eating "normally" otherwise.

When I diet I kick start it on VERY low calories and carbs. After a week when my body adjusts, it makes the "normal" diet easy. Haven't been hungry at all. Haven't craved carbs. I think I had maybe 10g of total carbs yesterday.

Some tips you know you're AT a low carb level:

You will get a sweet taste in your mouth, without having any carbs to eat at all. This is normal. Your body is making sugar from your fat.

You will eventually notice things you never considered "sweet" are actually quite sweet. Tomatoes, for example. Carrots. Onions. And believe it or not, whole wheat bread tastes almost like a doughnut.

Eventually when you lose all the weight your carbs should only come from fruits and veggies. SUGAR in other words. NO GRAINS.

The main source of our fatness are the two crops our government subsidizes the most. ;)

That's kind of what I'm doing right now. Low calorie count daily and very low carbs. No bread, pasta, etc. Been eating a lot of fruit and veggies, chicken, and fish.

First few days were rough, but now I am feeling much better and some of the cravings are starting to diminish.

Haven't gotten as far as having a sweet taste in my mouth.

You won't eating fruit. The sweet taste comes from ketosis

And that comes from less than 20ish total grams of carbs a day. Cup of fruit and you don't go into ketosis. Meat and veggies are awesome. Leaner the meat the better. Less the carbs the better. You can get all the carbs you need from veggies. In fact, stay away from sweet veggies like carrots and onions that are high(er) in sugar.

Every sugar calorie of fruit you eat will be burned before any fat. You can live fine burning just fat. But do whatever works for you. Helps to get into a routine, at least with me.

only kicker is sgetti is cheap and sgetti squash is not.

BTW, we roast it cut side up, seems to be drier than cut side down.

after shredding it up it was a lot more than expected and definitely a lot more than it looked like it was going to be.

I love brussel sprouts too. Tried roasting them the other night and was not very successful. They were somewhat bitter and also a little too charred. Any tips on those?

the most. Here's what we do:

cut off the stem end, cut in half top to stem end. Remove any loose leaves.
arrange on sheet pan etc covered with foil, cut side up. Spray with olive oil spray or Pam, etc. Sprinkle cut side lightly with paprika or smoked paprika or your fav paprika-blend like Emrils or Old Bay.
Turn over sprouts so cut side is down. Spray round side. Season w/ salt & pepper.
Roast in oven or good toaster oven @ 400 for 20 min or so, till turning brown. Cut side will be more browned. I'm kinda #### about arranging sprouts touching and all cut sides down when roasting. Good luck

Save the seeds. They are easy to grow and keep for a long time. Just put them in hills like squash...which is basically what it is. Maybe I'll get back to gardening at some point. Never had collards as good as I could grow. And the deer don't eat them.

Take a piece of bread, smear on some mayo, squeeze a few drops of mustard, slap on a slice of ham and top with another piece of bread. Sometimes I'll go nuts and open a bag of chips.

If you like a crispy thin crust, it's awesome. Zero carbs. Just leaves room for cheese, pepperoni and tomato sauce.
