I got a rosemary plant

because the store was out of the little packs.

Am I supposed to just break off stems of rosemary as I need them, or am I supposed to trim off all the stems at once and let them dry/cure a bit to bring out all the flavor?

This is NOT an analogy for something else. I'm actually talking about fresh rosemary.

Those things are hardy and will reproduce like feral cats. Mrs. Has them all around yard now. And yeah, she just trims off a sprig whenever she needs it. You pretty much can't kill the dang things. Strip off the leaves, roll them in your hands to release the oils, and drop it in whatever you;re cooking. Mrs. Tig just lays an entire sprig on a chicken breast if she's baking it. You can also grind up the leaves in a mortar with other spices. It's kinda one of those can't wrong with any method things.
