I made roasted golden beets w whipped goat cheese, pickles blueberries and spiced pecans.

Then halibut wrapped in prosciutto di parma, sousvide it then crisped in the pan and served with a lemon sabayon. Pan roasted some veggies.

Honestly my plan bested my execution. The beet salad was good. Individual components for the main were fine, but couldn’t really make a composed dish. Fish fell apart when slicing into medallions. The sabayon was how it was supposed to be, but really it’s just sort of like hollandaise. Oh well. Drank a bottle of really nice vermentino.

Wrapped before and rolled them up in cling wrap to keep its shape during cooking. I would either use a firmer fish like monkfish or portion it prior to cooking next time, as it didn’t slice well.

130° for 45 min.
