Do you think DaBO berated 3rd string QB HJ a bit too much?

Probably for his going out of bounds in last seconds after high snap, which stopped the clock.
Gotta give Hunter some praise for an admirable job of retrieving the high snapped ball.

The play was run exactly as Dabo called it except HJ was supposed to run out of bounds next to PJ and say to him "Dabo asked me to ask you who's your Daddy?"
Dabo knew he wouldn't be able to ask PJ himself after the game because too many cameras and microphones would be around, thus that is why he was mad.

He should have just covered it up so the clock could keep running. But i would also bust the center in the chops too - how many high snaps did he throw HJ? And that last one was ridiculous.
HJ did a very good job moving the team even with the high snaps.

KB did the exact same thing a few drives earlier and lost double digit yards when he could have thrown it away. Of course, if they practice for bad snaps, the centers are going to get their feelings hurt.

He is trying to get the game to slow down for HJ. I assume part of that is thinking through what you should do in various situations. Learning moment for Hunter and so glad he was able to chase down that bad snap.

Scolded or chastened is much more appropriate. He was in a situational play. He was supposed to close the game out by running the clock down without giving the opponents an opportunity to score. That was his directive and he was well able to execute his job.
No, I don't believe it was too severe unless Dabo brought his mother into the discussion.
