here it's just salad- but a good homemade Cobb salad w/ bacon, egg, blue cheese crumbles, plus more.
Having a new Devil's Backbone Helles Bock Lager, "mai Bock". 7.4 abv. nice fresh, almost tart, taste.

Ceviche in a Messikan Ressuhrunt
Mar 4, 2018, 7:01 PM

Was awesome. I'm pretty sure it was cooked correctly because the shrimp was so tender and soft. Usually if you get ceviche in the US it's cooked, then dumped in the otherwise awesome concoction and presented to you as authentic. Screw DHEC. I've eaten ceviche 100+ times in Mexico and never got sick. I usually get a combo (usually shrimp, scallops, fish, and sometimes octopus if you're lucky). It's almost my standard lunch meal while in Mexico. Have it served chilled on the beach with some fresh guacamole and chips and a Dos Equis green, and I'm set.
Now if only I could find some sangrita (not sangria...different)to go with some Don Julio Anejo, I'd be set. Even en las tiendas mexicanas en los Estados Unidos, no se vende.

Whether it turns out good or bad, it’s still some version of Mexican food with a beer. So I’m cool with that.

Spinach & lentil pasta, chop salad, bruschetta, and a 16 oz. Narragansett Lager to wash it down. Not a bad brew, picked it up since it was 4.50 for a sixer of 16 oz. cans and I hadn't had one since a conference at MIT in Boston many years ago.

I do most of the cooking here. It's good for therapy for me. But, she did say, "Tell Beefy hello." when I served her breakfast in bed this morning. You weren't under the bed were you?

Grilled salmon and asparagus, roasted Parmesan red potatoes.

Used same garlic/dill/lemon butter on salmon and asparagus. Also giving the grill mats I got for Crimmas a second trial run. Seem to work well for fish, which probably would have stuck and disintegrated directly in the grates.

on the regular burners. Figured I’d give it a go on the sear burner this time, and it DID put out some decent smoke for a few minutes, but burned up a box of chips quickly. The thermodynamics of propane grills also just don’t lend themselves to smoking—they’re too porous and the smoke escapes way too quickly to really be noticeable on the food. Good concept, but I just don’t think it’ll ever really work on a gas BBQ, er...grill.
And yeah, skinny asparagus makes all the difference. The thick stuff is like gnawing on tree branches.
