3/4 plywood?

MDF is a tad more expensive but it makes a great work surface, especially for wood working. And you should go 1” if you can. But 3/4” plywood will be more than serviceable.

horses with a 14’ extension ladder between them and chip board cut to width to cover the rungs.

I did treat the chipboard with two coats of shellac before applying the acorn stain though.

I always do a high grade pine plywood A-C maybe

then I stain it and put about 10 coats of poly gloss. It can take a pounding and will still look good. I'm in my 4th house that I have built work benches in.
