It’s my lazy man’s brisket

Depending on the thickness it doesn’t take near as long. I put it in a pan of butter, brisket rub and a little bullion after about an hour or so to keep it from drying out. Smoke at 225-250.

Usually do 2 and pull one at the pan stage and cube it up for chili.

but it will dry out quicker'n a #### if you're not careful. Did a couple last month, coated in cracked blk pepper and Hawaiian clay/red salt stuff, hard smoked for about an hour, then kept it wet with pineapple juice. High direct grill at the very end to caramelize the outside. Sounds weird, but it was top notch.

We did Christmas Day. In my experience, thick cuts are the way to go to keep it from drying out. We always marinate for about 48 hours.

I'd rather have chuck than a tenderloin or whole rib-eye.
