Gonna try a flat brisket on the BGE today...

Went to three stores, couldn't find a pointcut. Never cooked one this thin. Little bit of EVOO and some Lanes Brisket rub.

should be a good test if the BGE can hold lower temp for several hours.

At least it's an excuse to hang out on back deck, drink some beers and listen to some tunes.

What kind of coal you using? some type of LUMP
What beer you drinking? Either Two Hearted or Jai Alai to start, something lighter later (Naturdays?)
What tunes you got? Anything from Beastie Boys to Sonic Youth to Notorious BIG to Dinosaur Jr.
What time should I come over? Anythime you want, bring some pallets and we'll build another deck

Check to see if it’s drying out

With small briskets the foil or butcher paper crutch is definitely acceptable once it’s taken smoke.

I like to put them in a foil pan with bone broth or just bullion instead of wrapping them tight but then you have to watch the pan to make sure it doesn’t go dry.
