to steam some oysters.

he had a cheap charcoal grille, he lit the coals, put some oysters ON THE GRILL, then put a saltwater wet burlap bag on top of the oysters.

It made a smokey mess when the saltwater put out the coals, then he had burnt, ruined oysters that smelled like smoke.

over Christmas and they came out fabulous. Granted i was smart enought to put them in trays on the grill with just a little water in the trays.

Once up to temp each batch was done in about 12-15 minutes. The cook was way more even than in a steamer where the bottom ones get done first/overdone. And it was a steady stream of oysters going to the table so they never got cold as people were eating.

11/10 Will probably never do oysters another way again.

Oysters were selects, about palm sized. Yes unshucked.

Trays were just shallow cheap aluminum disposable kind, like a rimmed cookie sheet.

The water was just enough to cover the bottom of the tray, not enough to reach the edge of the shells. Added a little water every 3rd batch or so.

Temp was set at 450* so very little actual smoke.

I did some covered with a wet towel and some without. Not really much difference in the end product and the uncovered cooked marginally faster but not enough to really make a difference.

Served with the regular horseradish/coctail/hot sauce but i also made a mignonette with shallots and vinegar that was rediculously good with the oysters.

You'll need to drink beer for a couple of days, and I don't mean 3 or 4 a day, I mean 12+. Gotta get good and dehydrated. Once you see that peepee get nice and foamy it's time to start collecting it in a 5 gallon bucket. Do not stop drinking beer. Once you get a half gallon or so see if you can produce a little bit of vomit to mix in there. Don't be afraid to overdo it on the diarrhea either. For the finishing touch I like to throw in a couple of half smoked cigars from the (Dot)Indian gas station down the road.

Let that fester for a day or so in the sun, the hotter the better. Then you can pour into spray bottles to apply on your meat, or just dump that yummy marinade right on the burgers!

Why waste that lovely jenkem by spraying it on a burger? Transfer from bucket to a 2L bottle, get a balloon on it, and start collecting & huffing.

Actually looks like it may have come down in price a bit. Not too long ago it was "Ballast Point grapefruit Sculpin in 2015" overpriced.
