BASIC ECONOMICS!
Things like how banks work, balancing a checkbook, saving, compound interest (or simple interest for that matter), budgeting, investing, taxes.....
Too many kids have no idea about this

But they didn't get where they are (or were) by not understand basic econ.

We need financially illiterate people. They are the reason we have free internet websites. You like that credit card? Thank someone financially illiterate. Checking account? Banks? You like your house? You want a mortgage? Just a very bad idea. There's a reason we don't teach kids basic economics. Rich parents who beget rich children do that. The kid whose mom turns in her car title for a title loan, that kid is needed to make financially literate people wealthier.
I know this is tongue in cheek, but really we don't teach that stuff for this exact reason.
Just think of the "wealth" in our economy, based on the debt of financially illiterate people.

Somehow they left off balancing a checkbook, managing debt, minimizing taxes, investing, commuted value, compound interest, insurance, capital gains, 401K, IRA, or savings, property and sales taxes, etc.

I think I remember in middle school we had to take some home ec stuff...we cooked a couple things, sewed a few things. I don't know...some stuff that seems antiquated...maybe it's important to know basics? Anyway, basic life skills like managing a checking account (I'm not sure anyone manages a "Check book" any more...or balances it...just keep tabs online), the impact of debt and taxes, etc...that could all go into a life skills type of class, I suppose.
I taught Financial Literacy through a charity through a program at a previous job. Just these topics...checking, savings, debt, retirement accounts, compounding interest, etc. If anyone wanted to know what popular cell phone cases were out that year, I could tell you, because I saw the back of a LOT of cell phones. And no...they weren't recording the class to review later.

mainly because I don't want to spend the full class explaining what checks are.
Most econ guys I know teach this as well.
It's always fun listening to people who haven't been in a classroom since the 80's explain to me what we do and do not teach.

People still balance checkbooks? We very rarely ever write a check for anything these days…maybe one/month.

Was this kind of thing ever taught in schools? I'm 36, and I never saw it.
By the way, "balancing a checkbook" makes you sound old. I haven't written a check in a really long time, much less balanced a checkbook
