Yellow mustard binder. Heavy hand w Salt & Pepper. Smoke low low low low like 225 low until 165, wrap in butcher paper, back on until 205. Rest it in a cooler for hours, as long as you can possibly wait.

A couple of small twists:

-Mustard base. Heavy course salt and course pepper. Light dusting of garlic powder.

-Spend the time to find pink butcher paper and wrap it twice when you’re ready.

-You want it to look like a piece of char before you wrap it. It will not get any more bark once you wrap it. Also don’t be afraid to put your thermometer through the paper after it’s wrapped.

-My thermometers May be off, but I think it needs to be around 210 before you take it off. It needs to be like butter when you probe the thermometer.

- wrap it in a towel and put it in a dry cooler for at least 2 hours before cutting.

I have used this "snake method" recipe on my Weber kettle grill many times and its perfect each time.

Never fails but must use a whole brisket. mine are typically 14-17 lbs and prime cuts.

This is from America's Test Kitchen - watch the whole video

the ATK video and method is also described here:
