Using quikrete to patch the large hole in the septic tank. How long will I have to wait before using any of the facilities in the house while the concrete is setting? Should I put something over the hole then the quikrete?

not really, probably 8-12 hours.
Is the hole in the top? How are you forming it?
Sides? Need forms and possibly dowels to hold it in place.
Bottom? Don't do nothing, just pour and let set for 8 hours.

The hole is probably 6 inches by 8 inches.

pour quickrete on it and hope it sets before it falls through? No dowels, no forming, just mix with water and pour? I hope it works, but gravity is a real #####.
Maybe I am missing something though, make sure you don't mix the quickrete too thin.

Also thought about getting a piece of metal sheet and putting over the hole first

keep in mind this isn't your one piece tank.
This is cement blocks stacked and mortared into a tank. One of the blocks crumbled away over time. Gonna replace with another block and cement the whole #### thing around it. #### mortar

If it's in the bottom half of the tank I'd wait 30 days.

If it's on the upper side you might get by with a week. If it's on top of the tank 24 hrs is plenty. Water doesn't stop portland cement from curing. It actually helps. 24 hrs would be ok to cover the tank if the patch is on top but I wouldn't compact it for a week.
My concrete class in Lee Hall didn't cover studies on concrete curing in a poop environment.

turned out to be bending my neck to look down during study sessions. I had 24 semester hours so I was usually up at 4am and either in class or in a book until 11 or 12pm every night. I used weekends to catch up.
In order to remedy this and prevent it I used the drafting tables which tilted. I set up shop in that classroom in the back and often studies while other classes were held. I was almost a permanent fixture in there. I must have had 40 or 50 semester hours in that classroom.
I begged Liska for one of the offices in the basement but he was a turd and reserved them for grad students. I think three remained empty that semester. Steve Schutte would have given me one.
Oh the memories, is right.
