That wrangling couldn't have happened in a more appropriate place.
Only got to see The National Cowboy Museum passing through OKC in a hurry, but if you are ever nearby it's well, well worth a visit. Plan for about 3/4 of a day though to give it justice - it's huge. Real cowboys, movie cowboys, anything and everything cowboy and Old West.

always wondered - why did they go by the name "Cowboys?"

they weren't just herding COWS (which are females only), there were also steers, bulls, heifers, calves in the herds also. And weren't they mostly men, not boys? What set of grown men calls themselves "boys"?
Just a terribly wimpyass name, when what they are really are Cattle-Men. Name always seemed kinda odd to me.

Goes way back apparently. Chopped and hacked from wiki...
The English word cowboy was derived from vaquero, (Spanish pronunciation: [ba?ke?o] - buckaroo) a Spanish word for an individual who managed cattle while mounted on horseback. Vaquero was derived from vaca, meaning "cow", which came from the Latin word vacca. "Cowboy" was first used in print by Jonathan Swift in 1725, and was used in the British Isles from 1820 to 1850 to describe young boys who tended the family or community cows.
By 1849 "cowboy" had developed its modern sense as an adult cattle handler of the American West. Variations on the word appeared later. "Cowhand" appeared in 1852, and "cowpoke" in 1881, originally restricted to the individuals who prodded cattle with long poles to load them onto railroad cars for shipping.

than a respected job title.
I can just picture some wiseacre saying, "you some sort of Cowboy?", like a little kid haplessly trying to keep control over some slow, doddering, docile milk cows, not a PO'd herd of angry bulls.

with a fat pig except it was just some Latino men trying to load it into the back of a truck, with no ramp or anything. I'll look for the pictures.

it seems like if you buy a pig at the Dollar General, the employees would help you load it into the car.
IT'S CALLED 'SERVICE'.

the pig-loading service (and, well, really any service at all). They are doing YOU a favor by running the one register at a snails pace.
