who would it be and why?
I would pick Dabo Swinney. I'm always interested in talking with unique people who are positive and have been successful in life.

It's really only breakfast that is rude enough to intrude on other meals.
I have also heard of brinner when people eat pancakes and bacon in the evening.

I meant no disrespect to brinner because it can be quite enjoyable choice when the mood strikes.
Evening omelets, bacon/sausage egg and cheese biscuits or even your traditional breakfast spread can hit the spot on a random Tuesday night.
None of that however removes the disrespect that breakfast shoes to the other meals by coming in and taking over.

If you would have asked me yesterday I would have likely said Dabo Swinney because it would be so insightful and entertaining and I think there is a chance it could really make me a better person moving forward in life. He is the type of person that could really guide somebody to be better in their career and with their family.
Since you are asking today, I will say Beaux Collins because pizza sounds really good to me for lunch or dinner today and he has an NIL deal with Mellow Mushroom so I am guessing he could get us hooked up with a really delicious meal. Yep, tops on my to-do list today is get some good pizza.
What a difference a day makes.

I would say...

Coach K.
I would ask him about his final game at Cameron so I could watch his face get red and his veins pop out in his neck.
Then I would order him some cheese and leave.

If it wasn’t Dabo, I’d choose CJ Spiller. CJ seems like one of the nicest guys and he is probably my favorite highlight reel Clemson player ever. That stop, juke, and fly against Georgia Wreck in ‘06 was magic

2of the 3 guys he made miss in the span of a yard and a half ended up playing the NFL. Just wish he would have been drafted to a dome team or at least not Buffalo.

Does it have to be a football player or coach? If not Millie Thompson. Although if she doesn't like what I say she may stab me with a fork.
