salty, sour, bitter, umami realm. He is doing it poorly. I can only come to the conclusion that he has recently had some BBQ where the cook put unready coals on the fire thinking that thick white smoke was desired.

Remember that big trailer smoker we all had years ago in the Upstate? Well, I have it now. It needs some serious TLC, mainly a new underside welded on. The rest is just paint job, new thermometer, etc. Any tips/recommendations? I do have a neighborhood welder who can do that work.

Since it needs some work I'd take this time to think of things that were an issue and try and fix.
Was it easy enough to add wood or coals to, easy enough to clean?

Cleaning, meh. We did sometimes have a time getting the temperature to stay consistent.
