Older brother came into town a few weeks ago to spend time with my mom and made her jambalaya. I absconded with some of the leftovers and threw them in the freezer. Took it out tonight and had a delicious supper. Thanks bro!

any sort of shellfish at home, there are usually Creole influences. Sweet peppers and chilis, okra, corn and rice, and plenty of cayenne powder.

*I've never had good cajun food
*I don't have access to good cajun food
*I'm incapable of cooking good cajun food
*I don't know anyone from the New Orleans area that will cook for me
*I think Pappadeaux is something other than a cajun-themed Applebees
