Does anyone have a good recipe for venison tenderloin?

Found a couple in my freezer and would like to try something a little different from the "same ol, same ol'"

I love venison tenderloin!!!

I use a cast iron skillet and cook the tenderloin whole before slicing into medallions.

Use your favorite steak rub liberally all over the tenderloin.

Put on medium/high heat on skillet. You basically just want to sear the outside and they are so small that it will be rare/medium rare by the time you have a good sear all the way around. Let cool for 2-3 minutes and slice.

*** Remeber that Venison is a purple meat, so when it is red in the center it is medium rare!

You definitely don’t want to overcook because it will go from being juicy and delicious to dry real quick.

You can cook it the same way on a grill on high heat, it’s just easier for me in a skillet because I don’t get mine butterflied and I have to kind of hold it with a spatula on certain sides to get the sear even.

I know this isn’t a detailed recipe, but I’ve done it a million times with trial and error.

venison in my life, the only one that had the "wild" cooked out of it was a very slow session in a crock pot to make stew. Anything that was just fried still had way too much "wild" taste for my "meat and taters" palette.

loin meat. What I am talking about is the sort of meat you take from a younger (and usually a doe) deer - this will have no bad taste at all. My son ate fried deer cubed steak exclusively until he was about 10 years old. Then we bought some beef cube steak one August when we had eaten all the cube steak from the previous season and he took one bite and exclaimed, "What's wrong with this meat?" Do it right and you can't beat it.

Yep, you can’t beat good venison cube steak! My kids can’t eat beef cube steak. They say it’s too chewy and tough.

I agree I have a couple doe in my freezer. I have cut my tenderloin into steaks then marinated then overnight in teriyaki sauce, some wine and use light salt and pepper. Put them on a charcoal grill. Don’t over cook tenderloin is best for me with some red showing.

Some of my friends and myself use to get together for wild game night. The guy on the grill could turn out some great tenderloin steaks. I brought a couple home. My wife eat one and loved it until I told her it was deer meat. Then she said it had a wild taste. I told her I could not tell by the way she made quick work of the steak.

We would have rabbit, wild pheasant, bass and other fish, frog legs and bison. All great meats!

SOUS VIDE. (anova is a good brand). If you've never tried it, you can cook otherwise tough cuts of meat without drying them out. Once you try it, you'll want to cook everything via sous vide. It's sorta foolproof.

I've done venison tenderloin and backstrap for 2-3 hours at 125 and then coat generously with salt & pepper, and finish with a sear (cast iron with avocado oil and butter to finish OR get my BGE up to about 900 degrees and sear it). My hunt club buddies swear its the best venison they've ever had.

^^^^^ This is the way.

One small addition to the above is cool the cut of meat post sous vide by running under cold tap water. This allows for the meat to get a better sear with less risk of overcooking.

Venison Tenderloin


2 Tbsp butter
4 Tbsp oil
2 cloves garlic
2 medium sweet onions diced
1/2 tsp salt
1/2 tsp pepper
dash of thyme
4 Tbsp lemon juice
1 1/2 - 2 lbs venison tenderloin (1 1/2 - 2 1/2 inched thick)

allow meat to come to room-ish temperature
after meat has warmed, slice the top 1/8 inch in a diamond pattern
cook onions in butter until tender, add garlic to brown, remove from heat
add remaining ingredients
brush tenderloin with 1/2 onion mixture and broil 5 - 7 minutes
turn meat, brush with remaining onion mixture and broil 5 - 7 minutes
check temperature for desired doneness
pour juices from broiling pan over tenderloin before serving

Marinate in Montreal steak season and worstishire with a splash of liquid smoke. Wrap with bacon. Toothpick bacon in place. Grill med high direct heat until bacon is cooked. Make sure not to overcook the tendies. I like them like I like my fillet mignon rare to med-rare. About 7 mins per side. The bacon will help protect the venison from the flames if you wrap it good.

Season with your favorite dry rub, or I like to use a little salt(not too much), garlic, and pepper. Let sit for around 30 minutes. Then marinate with some balsamic vinaigrette or Italian dressing for a 3-4 hours. Remove and wrap in bacon. Then place on grill, but don’t overcook!
Good to slice and dip in creamy horseradish.
Enjoy however you cook it!

Get out your deep fryer. Fill it all the way to the top with some top choice frying oil (chef's choice). Leave those tendies in the freezer until that oil is boilin. Get out a stepladder and set it up right next to your deep fryer. Pull those tendies out the freezer and proceed up the ladder. From the top step, hold the tendies out and drop them STR8 into the fryer. Make sure you're doing this indoors too. Let them cook for about 4 and a half hours.

Dale's is a good marinade for venison but be careful, it is very salty. Marinade for only an hour or less. Italian dressing is another good one.
