My Dad called them "deep water trout". They will completely rearrange your boat when you land them as you probably know.

and look prehistoric when you see them. When the water is really low, they’ll come to the surface and gulp air. I’m pretty sure they’re only a few years from walking on land.

Nice Cypress trout. They are quite good to eat fresh. They do not freeze well. The best way to cook ole mud is to scale and cut them into about 1/2 inch steaks, meal and deep fry. I would not recommend them on a regular basis because they have a high mercury content. Don't knock it till you try it.

Where are you finding nice green gator grass and pond weed. Its mostly gone on majority of Santee from Helicopter spraying every green piece of vegetation they can find for last few yrs.

Spud, the biggest Gator I've ever seen while fishing, it was in the river down at a place called Packs Landing in Sumter county. I was in my brothers 14' Jon boat, and that monster was as long as the Jon boat I believe. It was so big, if he would have tried to get in the boat, he would have sunk it. He come so close to the boat that it scared the crap out of me, and I had my 357 cocked and ready if he would have gotten aggressive!!!

I don't eat them bc they are a little to mushy for me, but my mom loved them. She would slice them from head to tail cutting those fine bones in half a few times down each side, fry them well done, and she would eat her fill of them, bones and all!!!!

It’s almost an art to cooking them. Got to be really, really deep fried or else it’s mushy.

I haven’t had it since I was a kid, but older folks used to love them.

It's been many years since I caught a mudfish and nobody I knew growing up in SC ate them. But I lived in Louisiana for a few years and the cajuns like them. The cajun word for it is "choupique," pronounced like "shoe-pick." They eat them fresh but soak them (at least some people do) in vinegar for a little bit first. Supposedly that firms up the meat. Any of you fellows do that? I'm tempted to try eating one if I ever catch another one.

I was told by my mom that soaking them in vinegar was to draw all the blood out of the meat, but she did that over night after she cleaned them....

Spud, looks like your Curado has been well used. I have a dozen at least along with another dozen Chronarchs, plus another 45+ of mixed bag offshore, nearshore, freshwater, fly and Ice fishing equipment. Curado is an all time favorite, bought several in late 90s that still get used today.

Used to fish for them on lakes on Black Mingo using sliver spoon with red pork rind, hot on bottom and be on top quickly fighting, good fighting fish and actually good eating in winter when meat is firm
