put beer in drip pan.
Cook to desired temp.
Drink other beer while you wait.

Cooked a pork loin on my pellet smoker last week...

separate the 2 halves of the loin. Season with S&P.
rub the flat portion where the halves come together with dijon mustard. Then rub in brown sugar on the mustard and drizzle whiskey/bouron on the sugar.
Put the 2 halves back together and cover with bacon weave using thick bacon slices.
I tied in 3 places with kitchen twine.
I cooked at 315 for about 1.5 hrs (depends on size of loin) until desired internal temp was reached.
In parallel, I made a sauce by wisking bourbon, mustard, cayenne pepper, salt, pepper, brown sugar, soy sauce and a little oil together and simmered until thickened.
Slice pork about 1" think and drizzle sauce on.
