I've heard enough about cornbread

So here is the best cornbread you will ever eat....

2 cups of Cracker Barrel corn muffin mix
2 cups of whole butter milk
2 large eggs
5 Tbs butter
4 Tbs bacon grease
1 lb Suncrest Farms cornbread cracklings

Directions:

Melt 2 Tbs of bacon grease and 5 Tbs of butter
Mix butter milk with eggs just-do not over beat
Add b milk and egg mixture to muffin mix and stir to mix thoroughly
Add melted butter and bacon grease and stir to mix
Add cracklings mix in and let rest

While bread rests turn oven to 400 degrees
Add 2 tbs bacon grease to 10 inch cast iron skillet and place in oven
Leave skillet in oven until grease just begins to smoke
Remove skillet from oven stir cornbread and add to hot skillet
Evenly distribute mix in skillet
Place in hot oven
Bake until golden brown on top-use tooth pick to check if done in center

Remove from oven-Flip out of pan upside down-Slice into wedges-Place back in hot pan-right side up

This is good with anything cornbread goes with

I would look for them at your local IGA or Piggly Wiggly. If you can not locate them you can make them yourself. Find you a slab of fresh pork belly, 4-5 lbs. with the skin removed. Slice the belly in 1/4 by 1/4 slices and dice into about 1/4 by 1/2 pieces. Take your trusty cast iron 6 quart Dutch Oven and add about 2-3 inches of canola or peanut oil. Heat the oil to about 300-325 add the belly in small batches, about a handful at the time. Cook them until they float and just a little while longer, be careful and don't burn them. When each batch is done remove and place in a paper towel lined pan and sprinkle lightly with salt. Allow to completely cool before you store them. you can vacuum bag them in the amount you choose and enjoy.

Note: You will wind up with more grease than you started with. You will have some darn good grease to make cornbread with or use as you see fit!!

I'll stick with my wife's iron skillet recipe. Bought to have some tonight with homemade potato soup. Bit cool here tonight in Pickens. I'm good.

I use Joe Trapp or Congaree Mills cornmeal in a scratch recipe but the cast iron method is spot on.

cook in cast iron skillet that's oiled and put in the oven when you turn it on. Will have it mixed before the oven is hot!
