I can't get into Pho

I been working in the Vietnamese part of Houston for the past two weeks and I have tried to get into Pho and vietnamese food. I have been told several places are "the best" and I just don't care for it.
I like Thai, Chinese, Japanese, Korean... but something about the Vietnamese flavoring I am just not a fan of.

T_I_P #1- don't add hoisin to your pho, it can almost taste like plum sauce
I can't for the life of me imagine what else or what in standard pho broth would have fruity notes

I went through a big kick of making Vietnamese food at home, inspired by a program called Luke Nguyen's Railway Vietnam.
Best dishes of that country, in addition to a great baguette and bahn mi of course:

Bahn da cua tron

Vietnamese flavor profiles really not different than Thai or any other southeast asian, I'd say probably even less sweet than Thai food that uses a lot of palm sugar and coconut milk.
Fish sauce, Lemongrass, ginger, garlic, chile. Basically the base of every vietnamese dish.

to show my GF. I give it a couple splashes of sriracha sauce to heat it up a bit... that plus the jalapenos have me wiping sweat off my forehead. Pho Noodleville in Gville.
