Just curious and not arguing …. Are the Chipotle issues documented anywhere? I just went to the FDA recall web site to get more information on the JIF PB issue and reviewed the recent recalls and didn’t see anything about Chipotle. I spent my whole career in food manufacturing plants (and thankfully never had to manage any recalls for products that made anyone sick) so I like to stay current on these things.

They don’t. Not sure where they list food borne outbreaks that are traced to a restaurant. What I was looking at was a listing of recalled products. That article was interesting but also old news. It was pretty much a case study of outbreaks traced to Chipotle restaurants between 2008 and 2018, what caused them and steps they have taken since to improve their food safety program. Looks like they are trying.

Well, since you are trying to remove microscopic bacteria that you cannot see, it can be harder than you might think. Have you ever seen the inside of a food processing plant?

Seriously. To me it's a miracle that there aren't more recalls with everything that can go wrong inside of a facility.
What makes a product like peanut butter difficult to process is that the oil can act as a protectant to microorganisms during pasteurization, not allowing the product to uniformly get to temperatures high enough to kill off harmful bacteria.
