Help on Clemson Cuisine

First off, congratulations on making the CFP championship two years in a row. This Husker fan is pulling for you to win your first National Championship since you beat my Huskers in the Orange Bowl, following the 1981 season!
I need some help from you all on something. My wife and I have a party every Monday Night during Monday Night Football and make food and cocktails that are traditional to the host city that night. We are going to carry this tradition over to the National Championship Game and make a cocktail traditional to Clemson and Alabama, as well as a few dishes traditional to both schools/regions.
Since you are all experts on what is traditional to Clemson, could you give me a few suggestions? It can be tailgate food, the best dish at a local restaurant, or traditional homemade food from the region. For us and our guests the most important part is the drink. Is there a drink that is traditional to the area or to have before a Clemson Football game?

Ha! I think I will pass on that. I actually used to work in college athletics, and have a few former co-workers at Alabama, so I just asked them. I didn't tell them I was pulling for Clemson though.

We will have pulled pork with a vinger based bbq sauce and a white sauce to cover both teams.
They also suggested fried green tomatoes and fried pickles, with bread pudding for dessert.
Someone suggested a pimento cheese dip for Clemson, so we will have that and fried pickles as appetizers.
The drink they suggested is the yellow hammer.

This looks like it might be a winner. Sounds delicious, and we have a fresh seafood market close by that will fly in seafood fresh daily, so I can get fresh shrimp. Thank you for the suggestion.

My (ex) children's mother was born and raised in Souix City. I ate there often when we visited and endured her style of food until I remembered from my youth how to cook 'country.' Forget it, J/K

Take a 2lb bag of beans and a slab of fatback, fry up some taters and bake a pone of cornbread using a cast iron skillet and some crisco shortening. Then hurry out to a Cracker Barrel for supper. J/K, hop a plane and show up in Greenville late afternoon and give me a call.

As I suggested in another post, I'd go with Shrimp and Grits; a product that a Nebraskian can appreciate since a grit is a derivative of CORN.

and throw in a lime if you're so inclined. My fave right now is Four Roses Small Batch or Woodford Reserve but I try to take a different brand every game.

As for tailgate food...usually either pork or chicken. Pulled pork with a good mustard based or vinegar based sauce is always a good idea. Chicken and biscuits...too bad you don't have a Bojangles in Wash. If you prefer seafood, nothing says South Carolina like a good shrimp and grits or Frogmore Stew.

wanted me to add hers...Dark and Stormy. Probably a more traditional South Carolina drink since rum was king here for a very long time. More of a "costal" SC drink, but mighty tasty. We use Mount Gay Eclipse rum and Barritts Ginger Beer.

My wife and I were really surprised by how much we liked living in Omaha (both of us are Southerners). Great people and a nice town - never had to wait to be seated in any restaurant even on Friday nights at 6:00pm. First time I ever had to use a snow blower - those Nebraska winters can be brutal.

I agree with Tigersense - if you are wanting something that is strictly Southern then shrimp and grits is a great choice. Only thing I would change from the recipe link (http://allrecipes.com/recipe/220895/old-charleston-style-shrimp-and-grits/) is to cook the grits with about 2.75 cups water and a 1/4 cup of milk. Substituting a little of the water with milk gives the grits a little smoother (creamier) texture.

If you take the leap into the shrimp and grits then some mimosa's will serve as a good compliment while eating the meal.

By the way Clemson is a Land Grant school and holds a special brotherhood (and sisterhood) with the Cornhuskers.

I am friends with Dave Goeller - a former Nebraska runningback and now professor.

for bigger games.

Pretty simple and surprisingly amazingly tasty considering only two seasonings are involved.

Quarter a chicken, salt and pepper liberally, slap it over low charcoal. Salt and pepper each side again as they're turned the first few times while the chicken is vulnerable. Okay to cover a few times throughout to better maintain a steadier heat. No sauce needed at any point. Allow an hour plus over the coals.

This dish sprang up from the many wonderful times at the near-to-Clemson Burrels Ford camping area along the Chattooga River. Hardwood charcoal is best, especially if you can find some oak.

Serve it with Vinegar based BBQ sauce

Google is your friend for cooking pork shoulder and vinegar BBQ sauce (low temp and S-L-O-W cooking)

We are going with shrimp and grits as well as pulled pork. We'll have some cole slaw and mac and cheese to go with the pulled pork.
We will also have a pimento cheese dip to snack on.
Still deciding on the dessert, but to me nothing beats pecan pie, so I think we will go with that.
I have a bottle of Knob Creek and 1792 bourbon, so I will be sipping on that throughout the game.
My wife found a drink on a blog called the Tiger Paw? It is citrus vodka, lemon juice, sugar and orange soda. Not sure if it really is a traditional drink to Clemson, or if its just something that particular blogger made up, but we are going to try it out.
It really has been fun to do this all season long. We get to make a bunch of new recipes from different areas of the country. The people we invite over seem to enjoy it too!

It could be, feels like -8 today. Brutal!
I'm going to see how the smoker holds it temperature this weekend. I suppose I could use a crock pot, not ideal, but I'll go with what I have to work with.
Supposed to be 41 on Monday, so it may work out. Quite the temperature change, but that is the midwest for you. The old adage here is if you don't like the weather, wait an hour and it will change.

Beaufort Stew
So I don't know how hard it is to get good shrimp in Nebraska, never having been there, but if you can, then...

Get about 1/4 to 1/2 lb of shrimp (larger the better for this) per person
A couple of packages of kielbasa
Corn on the cob (that I figure you can get good) - full ears are fine, half work out nicely.
Some red potatoes
A bag of old bay seasoning
Slice up some onions for this too if you like.

Get a big pot. No, not that one, the really big pot. Like turkey fryer size.

Boil the water and the old bay bag with the onions (add these items when cold). Put in the potatoes and corn, bring back to a boil. Add the sausage, bring back to the boil again. Let it go for 5-10 minutes. Final step is to add the shrimp. Boil for no more than 5 minutes, until shrimp is pink - matter of fact, you can probably turn off the heat after about 3. Let it all sit in the hot water for 20 minutes (or more if you like). Dump the water, serve the food any way you like. A big pan or 3 with a towel in it is just fine. Goes well with your favorite beverage.

Pulled Pork

This takes all day, and I won't give you much of a recipe, but if you have the ability to smoke a boston butt or two, this is glorious. I rub the whole thing with a mixture of kosher salt, pepper, brown sugar, chili powder, paprika, and whatever else I decide to add. Wrap it up and put it in the refrigerator on Sunday night, and start smoking early Monday morning.

Sauce, no sauce, you decide. But smoke it at 225-250 degrees (max) and make sure you get the internal temp up to 195. Many good references on the interwebs on how to do this.

Man. Now I'm hungry.

Thank you, I will definitely use that rub for the pork, and will put it in my smoker Monday morning before work.
We actually have a Fresh Market close to my place, which flys in fresh seafood from the gulf and east and west coasts daily, so I have some shrimp on order I will be picking up on Monday. Thinking, I'm going to use them for shrimp and grits.

You can't get anymore SC than these 3 items

Frogmore Stew (http://discoversouthcarolina.com/articles/just-what-is-frogmore-stew) - Shrimp, Corn on the Cob, Potatoes, Sausage, Crablegs (optional) all in a pot with cajun seasoning

Pulled, shredded or chopped BBQ - with a vinegar or mustard based sauce - This requires a smoker to do it right
