Baking my first turkey for the game....

my wife is Colombian and we are usually home in the US with my family. This year because of COVID we are spending New Years' just us alone in Bogota.

I got the bright idea of baking my first turkey tomorrow. I have been watching youtube videos but any advice for a newbie?

Brand doesn't matter. If you have something like the Reynold's Brown in Bag, it is easy. If not, follow the info online as to oven temp and time for your bird. Use foil to make a tent on the top. Rub the bird with cooking oil, salt and pepper and put a piece of celery and an onion in the cavity. No Stuffing. When the legs begin to pull away, it's done.

Be sure you remove the plastic packet from the inside of the bird before placing in the oven. And of course you cannot cook at 700 degrees to cut the cooking time in half! :)

But to answer your question, I highly recommend Reynolds oven bags (same aisle as foil and ziplocs) to keep the meat from drying out while cooking.

My family has done this Rosemary Turkey recipe with shiitake gravy for years.. my grandfather was not one to give compliments on anything easily. We cooked this for him one year just before he passed and he loved it so much it brought tears to his eyes. Ive yet to have a better tasting turkey than this recipe produces.

NP. Hope it turns out well for you!

*Tip- Put the neck and liver (basically everything you pull out of chest cavity) into the bottom of basting pan. It adds great flavor and nutrients to the stock you’ll use for gravy... the meat from the turkey neck is quite possibly the best part imo...

I use salt, sugar, garlic, lemon juice, thyme to get started. You should be able to taste the brine before putting the turkey in and taste a hint (and only a hint) of each component individually in order for a) it to actually affect the flavor of the turkey and b) ensure the turkey doesn't end up overseasoned.

Rub liberally with kosher salt and choice of spices.

Get inside the cavity and under the skin.

Leave uncovered in the fridge for 48 hours.
